{"id":105,"date":"2011-08-28T19:56:49","date_gmt":"2011-08-28T19:56:49","guid":{"rendered":"http:\/\/markiscooking.com\/?p=105"},"modified":"2011-08-30T23:15:26","modified_gmt":"2011-08-30T23:15:26","slug":"rebeccas-ratatouille","status":"publish","type":"post","link":"https:\/\/markiscooking.com\/?p=105","title":{"rendered":"Rebecca&#8217;s Ratatouille"},"content":{"rendered":"<p>This is a modified version of the <a href=\"http:\/\/markiscooking.com\/?p=20\">Chicken Ratatouille<\/a> recipe that I published some time ago.\u00a0 Since then, my daughter (Rebecca) \u00a0has been living with us and she doesn&#8217;t like mushrooms and doesn&#8217;t eat much meat.\u00a0 I also recently needed to make a version that was vegetarian.\u00a0 My wife and daughter also liked the more intense tomato flavor in <a href=\"http:\/\/markiscooking.com\/?p=80\">Mark&#8217;s Chunky Red Sauce<\/a>, so this is the resulting recipe.<!--more--><\/p>\n<p><strong>Ingredients:<\/strong><br \/>\n(serves 4-8)<\/p>\n<p>1 14.5 oz can of diced tomatoes (or 6-8 fresh ripe tomatoes, peeled and diced)<br \/>\n1 6 oz can of tomato paste<br \/>\n1 tsp balsamic vinegar<br \/>\n1 tsp Italian seasoning blend<br \/>\n1 tsp sea salt<br \/>\n1\/2 tsp ground black pepper<br \/>\n1 to 3 tbs sugar (to taste &#8211; I like it sweeter so I use 3 tbs)<br \/>\n2 medium garlic cloves, minced<br \/>\n1 medium onion, fine diced<br \/>\n2 medium Zucchini, sliced<br \/>\n1 large Chinese Eggplant (the long thin light purple kind), sliced<br \/>\n1 Green or Red Pepper, cored and sliced into 1\u00d71&#8243; pieces<br \/>\n1\/4 cup sweet marsala wine<br \/>\n1 tbs olive oil<\/p>\n<p>In a large (4 qt at least)\u00a0pan over medium-high heat, add the olive oil and heat until good and hot.\u00a0 Add the onions and saut\u00e9 until they are starting to brown and turn translucent.\u00a0 Add the balsamic vinegar and stir until the onions are well coated.\u00a0 Add the ground pepper, Italian seasonings and garlic and stir for about 1 minute to release the aromatics.\u00a0 Add the marsala and deglaze the pan.\u00a0 Now add in peppers, stir\u00a0and continue to cook for about five minutes.\u00a0 Next add the squash, eggplant, tomatoes and tomato paste and stir well to make sure the paste is well distributed.\u00a0 Add the salt and sugar and stir in well.\u00a0 Heat until the mixture is just bubbling then\u00a0turn the\u00a0heat down to low and cover.\u00a0 Let simmer for 30 minutes then uncover and stir.\u00a0 Cook for another 10-15 minutes on low to reduce the sauce.\u00a0 Serve and enjoy!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>This is a modified version of the Chicken Ratatouille recipe that I published some time ago.\u00a0 Since then, my daughter (Rebecca) \u00a0has been living with us and she doesn&#8217;t like mushrooms and doesn&#8217;t eat much meat.\u00a0 I also recently needed to make a version that was vegetarian.\u00a0 My wife and daughter also liked the more [&hellip;]<\/p>\n","protected":false},"author":1,"featured_media":0,"comment_status":"open","ping_status":"open","sticky":false,"template":"","format":"standard","meta":{"footnotes":""},"categories":[10],"tags":[84,82,167,86,165,166,85],"_links":{"self":[{"href":"https:\/\/markiscooking.com\/index.php?rest_route=\/wp\/v2\/posts\/105"}],"collection":[{"href":"https:\/\/markiscooking.com\/index.php?rest_route=\/wp\/v2\/posts"}],"about":[{"href":"https:\/\/markiscooking.com\/index.php?rest_route=\/wp\/v2\/types\/post"}],"author":[{"embeddable":true,"href":"https:\/\/markiscooking.com\/index.php?rest_route=\/wp\/v2\/users\/1"}],"replies":[{"embeddable":true,"href":"https:\/\/markiscooking.com\/index.php?rest_route=%2Fwp%2Fv2%2Fcomments&post=105"}],"version-history":[{"count":7,"href":"https:\/\/markiscooking.com\/index.php?rest_route=\/wp\/v2\/posts\/105\/revisions"}],"predecessor-version":[{"id":109,"href":"https:\/\/markiscooking.com\/index.php?rest_route=\/wp\/v2\/posts\/105\/revisions\/109"}],"wp:attachment":[{"href":"https:\/\/markiscooking.com\/index.php?rest_route=%2Fwp%2Fv2%2Fmedia&parent=105"}],"wp:term":[{"taxonomy":"category","embeddable":true,"href":"https:\/\/markiscooking.com\/index.php?rest_route=%2Fwp%2Fv2%2Fcategories&post=105"},{"taxonomy":"post_tag","embeddable":true,"href":"https:\/\/markiscooking.com\/index.php?rest_route=%2Fwp%2Fv2%2Ftags&post=105"}],"curies":[{"name":"wp","href":"https:\/\/api.w.org\/{rel}","templated":true}]}}
